I discovered the best home made brownies while living in the beautiful Island of Hawaii where I learned simple vegan brownies and other recipes. This easy brownie recipe with cocoa will amaze you because it doesn’t require eggs! Interestingly, this an amazing no bake brownie recipe that is completely vegan and made from scratch. My recipe for chocolate brownies with dates will beat any other vegan brownie because they are moist, flour-free, vegan, sugar free, and delectable.
Though easy, these brownies will never be dry, and they will always be chewy, sweet, and mouthwatering. Careful, you may not want to stop at one!
How Living in Hawaii Gave me Brownies
In this section, relive my time with me while I was volunteering in Hawaii. Furthermore, my craving for healthy, vegan alternatives sent me all the way from Houston, Texas to the Jungle of Hilo, Hawaii.
Firstly, I was a workaway volunteer for a sustainable farm in the lush jungle in the remote NE side of the Big Island. Known for it’s laid back attitude and black sand beaches, I found myself entranced with getting to know people and the land.
As a result of my volunteering, part of my work was cooking meals for fellow volunteers and guests at our sustainable farm. I worked with a lead professional chef who had been living on the Big Island for over 20 years.
This chef cooked vegan food his entire career. He is the mastermind behind my cultivation of the Bakeless Vegan Brownie.
He encouraged us volunteers to create desserts with the fruit produce that we gathered off the land. I came up with many beautiful desserts with Mamey Sapote, Papaya, and Sapodilla fruit.
This recipe, specifically, was created with organic dates that were shipped in from an sustainable farm not in Hawaii, however, I made these brownies so often that my friends would ask me when I would make the next batch!
Get Ready to Cook an Easy Brownie Recipe!
No bake time needed, although save 2 hours for refrigeration time for hardening and 10 minutes for preparation. Make sure that you have a food processor because it is important for grinding the nuts and dates into a delicious paste to make a tasty base for the brownie.
Ingredients:
- 1 Cup Walnuts
- 1 1/2 Cup Pitted Dates
- 1/2 Cup Almond Butter
- 1/2 Cup Organic Cocoa Powder
- 1/4 Cup of toppings of choice.
- Chocolate Chips, nuts, coconut, pecans, almond slivers, pumpkin seeds, oats, etc.
Directions:
1. Blend walnuts until fine, as a result, a fine dusting of walnut powder will form with small chunks.
2. Add the dates. Blend until fine, as a result, a date & walnut “paste” will form. The texture will be thick.
3. Add cocoa powder & almond butter. Blend until well combined.
4. Press into square pan (9×9), The Caraway pan is my favorite. It has a Naturally Slick Ceramic Coating, and is Non-Toxic, PTFE & PFOA Free.
5. Spread your toppings of choice over the mixture by gently pressing them into the top of the brownie using subtle force with clean hands, or the bottom of a cup.
6. Chill for 1.5 – 2 hours in the refrigerator.
